  • 1 cup lentils red or green, rinsed and drained
  • 2 medium potatoes peeled and diced
  • 1 medium onion finely chopped
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 4 cups vegetable broth
  • 1 cup water
  • 1 tsp cumin powder
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp lemon juice optional, for serving
  • Fresh parsley chopped, for garnish

Method
 

Prepare the Vegetables
  1. Dice the potatoes, carrots, celery, and onion. Mince the garlic.
Sauté Aromatics
