  • 2 cups cooked chicken breast diced or shredded
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt plain or flavored
  • 1 stalk celery finely chopped
  • 1/4 cup red onion finely chopped
  • 1/4 cup grapes halved (optional)
  • 1/4 cup dried cranberries or raisins optional
  • 1/4 cup chopped pecans or almonds optional
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Fresh herbs such as parsley, dill, or chives for garnish (optional)

Method
 

  1. In a large mixing bowl, combine the diced or shredded cooked chicken breast, chopped celery, chopped red onion, grapes (if using), dried cranberries or raisins (if using), and chopped pecans or almonds (if using).
  2. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and pepper until smooth and well combined.
