  • 1 pound large shrimp peeled and deveined (450g)
  • 4 cloves garlic minced (12g)
  • 2 tablespoons butter 30g
  • 2 tablespoons white wine 30ml
  • 2 tablespoons freshly squeezed lemon juice 30ml
  • 1 teaspoon dried parsley 5g
  • Salt and pepper to taste (2g)
  • 1 cup linguine 115g

Method
 

  1. Bring a large pot of salted water to a boil and cook the linguine according to package instructions.
  2. In a large skillet, melt the butter over medium-high heat. Add the garlic and cook for 1-2 minutes or until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes per side or until pink and cooked through.
  4. Remove the shrimp from the skillet and set aside.
  5. Add the white wine and lemon juice to the skillet and cook for 1-2 minutes or until the sauce has slightly thickened.
  6. Stir in the parsley and season with salt and pepper to taste.
  7. Serve the shrimp over the linguine and drizzle with the scampi sauce.
