Amangiri pancake was said to be the best pancake in the world and it still holds that feat today, this is a unique Amangiri pancake recipe that replicates the elegant and deeply desired dish from the resort.

Ingredients
  

Dry Mix
  • 2 cups all-purpose flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
Wet Mix
  • 3 cups buttermilk
  • 2 whole eggs
  • 4 tablespoons melted butter
  • 2 tablespoons Coca-Cola
Extra Ingredients
  • These are other optional ingredients you can add to enhance the flavor and taste of the pancakes.
  • ½ cup sliced bananas or fresh blueberries, this will help to add a fruity flavor.
  • ¼ cup chocolate chips this is perfect for people like me who love chocolate.
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon powder.

Method
 

  1. Get a bowl, pour in the buttermilk and whole eggs, and whisk them together thoroughly.
  2. Melt the butter, and pour it slowly into the mixture while whisking.
  3. Now, add the Coca-Cola into the bowl and mix well. We're done with the wet mix for now.
  4. It's time for the dry mix. Get another large bowl, and mix all the dry ingredients: the all-purpose flour, baking powder, baking soda, and salt.
  5. Now, it is time to prepare the batter. Slowly pour the wet mixture into the bowl of dry ingredients. Mix gently until everything is combined well.
  6. Now, it is time to make the pancakes. Place a cast iron pan inside your oven, and preheat your oven to 232°C or 450°F.
  7. Carefully take out the pan, and add about 1-2 teaspoons of clarified butter and allow it to melt, then swirl the pan around till the butter covers the surface of the pan.
  8. Take a big spoon, and scoop the batter into the cast iron pan till it is halfway full so there is space for the pancake to rise as it bakes.
  9. Now, put the pan back into the oven and bake for about 15 minutes till the surface is golden brown.
  10. To check if it is done, insert a toothpick into the center of the pancake, if it comes out clean (or with small crumbs) then it is ready.
  11. Once it is done, take the cast iron pan out of the oven, turn it over onto a plate, then gently tap the pan to help the pancake be released.
  12. Now, the Amangiri pancakes are ready.

Notes

  • To add a delightful fruity flavor, you can add some berries or other fruits as a topping.
  • You can dust the pancake with some powdered sugar to add more sweetness.
  • Serve with a side of maple syrup or flavored butter as they complement the pancakes well.
