Method
- Get a bowl, pour in the buttermilk and whole eggs, and whisk them together thoroughly.
- Melt the butter, and pour it slowly into the mixture while whisking.
- Now, add the Coca-Cola into the bowl and mix well. We're done with the wet mix for now.
- It's time for the dry mix. Get another large bowl, and mix all the dry ingredients: the all-purpose flour, baking powder, baking soda, and salt.
- Now, it is time to prepare the batter. Slowly pour the wet mixture into the bowl of dry ingredients. Mix gently until everything is combined well.
- Now, it is time to make the pancakes. Place a cast iron pan inside your oven, and preheat your oven to 232°C or 450°F.
- Carefully take out the pan, and add about 1-2 teaspoons of clarified butter and allow it to melt, then swirl the pan around till the butter covers the surface of the pan.
- Take a big spoon, and scoop the batter into the cast iron pan till it is halfway full so there is space for the pancake to rise as it bakes.
- Now, put the pan back into the oven and bake for about 15 minutes till the surface is golden brown.
- To check if it is done, insert a toothpick into the center of the pancake, if it comes out clean (or with small crumbs) then it is ready.
- Once it is done, take the cast iron pan out of the oven, turn it over onto a plate, then gently tap the pan to help the pancake be released.
- Now, the Amangiri pancakes are ready.
Notes
- To add a delightful fruity flavor, you can add some berries or other fruits as a topping.
- You can dust the pancake with some powdered sugar to add more sweetness.
- Serve with a side of maple syrup or flavored butter as they complement the pancakes well.
