- Season chicken breasts with salt and pepper. Grill or pan-cook until done, about 6-7 minutes per side. Let rest and then slice.
- Arrange tomato and mozzarella slices alternately on a platter, tucking basil leaves in between.
- Drizzle with olive oil and balsamic vinegar.
- Top with sliced chicken and serve.
