Ingredients
  

  • 2 chicken breasts sliced thinly
  • 3 cups mixed vegetables bell peppers, broccoli, carrots
  • 3 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 2 cups cooked rice
  • 1 tablespoon vegetable oil

Method
 

  1. Heat oil in a large skillet or wok over medium-high heat. Add garlic and ginger, sauté for 1 minute.
  2. Add the chicken slices, cook until browned and cooked through, about 5-7 minutes.
  3. Add the mixed vegetables and stir-fry until tender, about 5-7 minutes.
  4. Add soy sauce, stir to coat all ingredients evenly.
  5. Serve over cooked rice.
