- Preheat the oven: Set your oven to 400°F (200°C).
- Prepare the squash: Halve the acorn squashes and scoop out the seeds using a spoon. Place them cut-side up on the baking sheet.
- Make the glaze: In a mixing bowl, whisk together olive oil, maple syrup, cinnamon, nutmeg, salt, and pepper.
- Brush the squash: Use a basting brush to generously coat the inside and edges of each squash half with the glaze.
- Bake: Roast the squash for 40 minutes, or until the flesh is tender and caramelized. Check with a fork—it should easily pierce the flesh.
- Optional garnish: Sprinkle chopped pecans or fresh thyme on top before serving for added texture and flavor.
