Preheat the Oven:

- In a medium mixing bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper. Set aside.
Cook the Vegetables:
- Heat olive oil in the skillet over medium heat.
- Add the onions and sauté for 2–3 minutes until softened.
- Stir in the mushrooms and cook for an additional 3–4 minutes until tender.
- Add the spinach and cook until just wilted, about 1–2 minutes.
Assemble the Frittata:
- Pour the egg mixture over the vegetables in the skillet, ensuring it spreads evenly.
- Sprinkle shredded cheese on top.
Cook on the Stovetop:
- Reduce the heat to low and cook for 5–6 minutes, allowing the edges to set while the center remains slightly runny.
Bake in the Oven:
- Transfer the skillet to the preheated oven and bake for 8–10 minutes, or until the frittata is fully set and lightly golden on top.
Cool and Serve:
- Remove the skillet from the oven (use oven mitts!) and let the frittata cool for 5 minutes.
- Slice into wedges and serve warm.
