- Place the chopped potatoes in the large pot and add enough cold water to cover them. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.
- Drain the potatoes in the colander or strainer and return them to the pot. Add the milk, butter, salt, and pepper, and mash the potatoes with a masher or potato ricer until they're smooth and creamy.
- Taste and adjust the seasoning as needed. If the potatoes are too thick, add a little more milk. If they're too thin, add a little more butter or mash them for a few more minutes.
- Serve the mashed potatoes hot, garnished with chopped fresh herbs or grated cheddar cheese if desired.
