Prep the Pork Chops:
- Pat the pork chops dry with a paper towel to help them sear properly.
- In a small bowl, mix the salt, pepper, garlic powder, and paprika. Rub this mixture evenly over both sides of the pork chops.
Heat the Skillet:
- Place a large skillet over medium-high heat. Add the olive oil and let it heat until shimmering.
Sear the Pork Chops:
- Place the pork chops in the hot skillet and cook for 3–4 minutes on the first side without moving them until they develop a golden crust.
- Flip the pork chops and sear the other side for another 3–4 minutes.
Add Butter and Aromatics:
- Reduce the heat to medium. Add butter, garlic, and thyme/rosemary to the skillet. As the butter melts, spoon it over the pork chops to infuse them with flavor.
Check for Doneness:
- Use a meat thermometer to check the internal temperature. Pork chops are done when they reach 145°F (63°C). If they need more time, cook for another 2–3 minutes, flipping occasionally.
Rest the Pork Chops:
- Transfer the pork chops to a plate and tent with foil. Let them rest for 5 minutes to retain their juices.
Serve:
- Serve warm with your favorite sides like mashed potatoes, roasted vegetables, or a fresh salad.
