Ingredients
  

Pork Chops:
  • 4 bone-in or boneless pork chops about 1-inch thick
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
For Searing:
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic smashed
  • 4 sprigs of fresh thyme or rosemary

Equipment

  • Large skillet cast iron recommended
  • Tongs
  • Meat thermometer
  • Mixing bowl this is optional for seasoning
  • Plate for resting the pork chops
  • Aluminum foil

Method
 

Prep the Pork Chops:
  1. Pat the pork chops dry with a paper towel to help them sear properly.
  2. In a small bowl, mix the salt, pepper, garlic powder, and paprika. Rub this mixture evenly over both sides of the pork chops.
Heat the Skillet:
  1. Place a large skillet over medium-high heat. Add the olive oil and let it heat until shimmering.
Sear the Pork Chops:
  1. Place the pork chops in the hot skillet and cook for 3–4 minutes on the first side without moving them until they develop a golden crust.
  2. Flip the pork chops and sear the other side for another 3–4 minutes.
Add Butter and Aromatics:
  1. Reduce the heat to medium. Add butter, garlic, and thyme/rosemary to the skillet. As the butter melts, spoon it over the pork chops to infuse them with flavor.
Check for Doneness:
  1. Use a meat thermometer to check the internal temperature. Pork chops are done when they reach 145°F (63°C). If they need more time, cook for another 2–3 minutes, flipping occasionally.
Rest the Pork Chops:
  1. Transfer the pork chops to a plate and tent with foil. Let them rest for 5 minutes to retain their juices.
Serve:
  1. Serve warm with your favorite sides like mashed potatoes, roasted vegetables, or a fresh salad.
