- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare the Squash:
- Wash the delicata squashes thoroughly.
- Slice each squash in half lengthwise and scoop out the seeds with a spoon.
- Slice the halves into ½-inch thick half-moons.
Season the Squash:
- In a mixing bowl, combine the olive oil, maple syrup, chopped sage, salt, and pepper.
- Toss the squash slices in the mixture until evenly coated.
Arrange and Roast:
- Arrange the squash in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 20-25 minutes, turning halfway through, until the squash is tender and golden.
Optional Garnish: Sprinkle with Parmesan cheese just before serving, if desired.
