Prepare the Dough:
- In a large mixing bowl, combine the warm milk and active dry yeast. Let it sit for about 5 minutes until the yeast is foamy.
- Add the granulated sugar, melted butter, eggs, salt, and 4 cups of flour to the bowl. Mix until a soft dough forms. If using a stand mixer, knead the dough with the dough hook attachment for about 5-7 minutes. If kneading by hand, transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic, adding more flour as needed.
- Place the dough in a greased bowl, cover with a kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.
Prepare the Filling:
- In a small bowl, mix together the softened butter, brown sugar, and ground cinnamon until well combined. Set aside.
Assemble the Cinnamon Rolls:
- Punch down the risen dough and transfer it to a floured surface. Roll out the dough into a rectangle, about 16x20 inches in size.
- Spread the cinnamon sugar filling evenly over the dough, leaving a small border around the edges.
- Starting from one long edge, tightly roll up the dough into a log. Pinch the seam to seal.
- Use a sharp knife to slice the log into 12 equal-sized rolls.
Bake the Cinnamon Rolls:
- Place the cinnamon rolls in a greased 9x13 inch baking dish, leaving space between each roll for them to expand.
- Cover the dish with a kitchen towel or plastic wrap and let the rolls rise for another 30-45 minutes, until puffy.
- Preheat the oven to 350°F (175°C). Once preheated, bake the cinnamon rolls for 20-25 minutes, or until golden brown and cooked through.
Prepare the Cream Cheese Icing:
- In a small mixing bowl, beat together the softened cream cheese and butter until smooth and creamy.
- Add the powdered sugar and vanilla extract, and continue to beat until well combined. If the icing is too thick, add milk, one tablespoon at a time, until you reach your desired consistency.
Frost the Cinnamon Rolls:
- Once the cinnamon rolls are baked and slightly cooled, spread the cream cheese icing evenly over the warm rolls.
Serve and Enjoy:
- Serve the cinnamon rolls warm and enjoy the indulgent combination of soft, gooey dough and sweet cinnamon filling, topped with creamy icing.
