Preheat the Oven:
- Set your oven to 350°F (175°C). Line baking sheets with parchment paper for easy cleanup.
Prepare the Dough:
- In a large mixing bowl, beat the softened butter with powdered sugar until light and fluffy. Mix in the vanilla extract.
- Gradually add the flour and salt, mixing just until combined. Fold in the finely chopped nuts using a spatula.
Shape the Cookies:
- Scoop about 1 tablespoon of dough, roll it into a ball, and place it onto the prepared baking sheet. Repeat, spacing the cookies about 1 inch apart.
Bake the Cookies:
- Bake in the preheated oven for 12-15 minutes, or until the cookies are set but not browned. Keep an eye on them to avoid overbaking.
Cool and Coat:
- Allow the cookies to cool for about 5 minutes on the baking sheet before transferring them to a wire rack. While still warm, roll the cookies in powdered sugar to coat them fully.
- Once completely cooled, roll them in powdered sugar again for a snowy finish.
