Ingredients
  

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar plus extra for coating
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 3/4 cup finely chopped nuts walnuts, pecans, or almonds work best

Method
 

Preheat the Oven:
  1. Set your oven to 350°F (175°C). Line baking sheets with parchment paper for easy cleanup.
Prepare the Dough:
  1. In a large mixing bowl, beat the softened butter with powdered sugar until light and fluffy. Mix in the vanilla extract.
  2. Gradually add the flour and salt, mixing just until combined. Fold in the finely chopped nuts using a spatula.
Shape the Cookies:
  1. Scoop about 1 tablespoon of dough, roll it into a ball, and place it onto the prepared baking sheet. Repeat, spacing the cookies about 1 inch apart.
Bake the Cookies:
  1. Bake in the preheated oven for 12-15 minutes, or until the cookies are set but not browned. Keep an eye on them to avoid overbaking.
Cool and Coat:
  1. Allow the cookies to cool for about 5 minutes on the baking sheet before transferring them to a wire rack. While still warm, roll the cookies in powdered sugar to coat them fully.
  2. Once completely cooled, roll them in powdered sugar again for a snowy finish.
