Method
- Heat a large skillet over medium heat. Place one tortilla in the skillet.
- Sprinkle 1/2 cup of cheese and 1/4 cup of chicken or beans on the tortilla.
- Top with another tortilla and cook until the bottom tortilla is golden and crispy, about 3 minutes. Flip and cook the other side until crispy and the cheese is melted.
- Remove from skillet and cut into wedges. Serve with salsa, sour cream, and guacamole.
